Easy-To-Make Chocolate Covered Strawberries

Chocolate covered strawberries are my guilty pleasure.

I can’t stress how easy these are to make. Honestly. To be completely transparent, I’ve been making these for a couple years now just a snack. But these tasty treats are perfect for Valentine’s Day. So let me share my chocolate covered strawberry recipe with you guys!

As a side note, I’ve been watching Bling Empire…what the heck man…these people are insanely rich. I’m stressing over whether or not we can afford to have drapes in the tent at our wedding, meanwhile they’re feuding over jewelry and table seating. Honestly, I’m here for Kevin cuz he’s not from this lifestyle and is always just flabbergasted at what people are saying or how they’re acting. I’m going to keep watching while I eat my fancy chocolate covered strawberries. The only thing rich about me is the chocolate I eat…lol.

WHAT YOU’LL NEED

Fresh strawberries – washed and dried.

Bowls for melting chocolate.

Bags of chocolate chips of your choice. I’m using white and dark.

Optional: Pink food coloring, gold sprinkles and coconut flakes.

Spoons for mixing.

Cooling rack.

Parchment paper.

HOW TO MAKE

Wash and dry the strawberries. This is important! If the strawberries are wet, the chocolate will not stick.

In a bowl, melt chocolate morsels in a microwave until they are no longer solid. Do this in increments of 25 seconds, stirring between cycles, to avoid burning chocolate.

Dip strawberries into melted chocolate, rotating for full coverage. Work quickly, as the chocolate will cool quickly. Reheat bowls of melted chocolate when necessary.

Place the chocolate covered strawberries on the cooling rack over parchment paper and repeat. This prevents the strawberries from cooling in chocolate puddles.

Optional: Using a spoon, carefully shake your sprinkles or coconut shavings onto the chocolate covered strawberries. The toppings will stick to the melted chocolate. Work quickly – once the chocolate cools on the strawberries, the toppings will not stick.

Lastly, place in the fridge to harden chocolate and serve chilled on your DIY cake plate.

Pat and I are not really doing anything for Valentine’s Day this year. We’re keeping it real low key and making a nice dinner at home. We’re thinking build-your-own sushi! Pat used to be a sushi chef so he’s really going to be doing all the work, jk. His roll is going to come out looking spectacular and mine is going to be oversized and misshapen…just watch.
